Pho and food truck. I can;t believe this exists.
Too bad its not near my office. Looks like now I’ll have to get Pho today, but from the usual place.

This is the one thing I miss about living in California. There is a fantastic variety of food to choose from. Here in Montana everything is a variation of steak, chicken, potatoes, and pasta. If you get anything remotely exotic it will be dumbed down with catsup.

I was fortunate enough one summer to be in Japan on national eel day. My god it was good.

Not as unusual as you might think, at least not on this side of the Pacific. The Thai equivalent of pho, guay tiaw (they’re almost indistinguishable to the Western tongue), is similarly cooked, assembled, and sold on street corners throughout Thailand from their version of the the American hot dog cart. Americans see pho and guay tiaw as exotic delicacies, whereas the Vietnamese and Thai see it as cheap-and-easy street food.
Only, it’s the most delicious street food EVARRRR.
